Veg Nuggets| Vegan Nuggets

Veg Nuggets is a popular appetizer among vegetarians. Nuggets are most common starter available in every restaurants. Its one of the kids special recipe you can make at home. You can add any vegetables as per your wish. Its a very healthy appetizer kids can have, it contains lots of veggies.

To make it more interesting you can even add grated cheese. And also use brown bread instead of white breads for binding. Its see the recipe.


Ingredients
Potatoes – 3no medium size boiled
Potato – 1no finely chopped
Green Capsicum – 1no finely chopped
Carrot – 1 no finely chopped
French Beans – 10 no finely chopped
Sweet corn – ½ cup
Grated Cheese – ½ cup
Bread Crumbs – 1 cup + ½ cup(Wheat Bread)
Powdered Corn flakes – ½ cup
Crushed pepper powder – 1tsp
Red Chilly flakes – 1tsp
Italian seasoning – 1tsp
Corn flour – 2tblsp
Maida – 2 tblsp
Water – ½ cup
Salt to taste

Recipe
In a bowl mash the boiled potatoes and add the chopped carrot, beans, capsicum, and potato. Add the corn kernel and grated cheese. Mix well.
Then add 1 cup of bread crumbs, crushed pepper, chilly flakes, Italian seasoning and salt to taste. Mix all together.
Divide it into an equal parts and give it a nugget shape. Keep a side.
Next make a batter using maida, corn flour, salt and water. Mix it to a running consistency. 
On the other side, Mix the ½ cup bread crumbs and corn flakes powder together.
Dip all the nuggets one by one in a batter and coat the bread crumbs well.  Keep aside.
Fry the nuggets in the hot oil. Hot and crispy nuggets are ready.
Serve it with tomato sauce, tandoori mayo etc.

Note
You can deep freeze the nuggets before frying and also store it for a week in the freezer. You can fry whenever you want.
