Carrot Kheer| Carrot Payasam
Carrot Kheer is a very healthy dessert. Carrot is a good source of vitamins, potassium and antioxidants. Any carrot based milk has nutritious value. Regular intake of this nutritious milk would aid in lowering down blood pressure and cholesterol.
This is one of delicious and healthy dessert you can have. Lets see the recipe.
Ingredients
• Carrot – 6no
• Sugar – ½ cup
• Boiled Milk – 1litre
• Green cardamom – 5
• Grated nutmeg – 2 pinch
• Cinnamon – 2 pinch
• Edible camphor a pinch
• Almonds Chopped – 1tblsp
• Cashews Chopped – 1tblsp
• Pista Chopped – 1tblsp
• Condensed milk – ½ cup
• Ghee – 1 tsp
• Salt a pinch
Recipe
• Peel off the carrot. Cut 4 carrots into cubes and pressure cook the carrot for about 2 whistles by adding some water.
• Simultaneously, grate the remaining 2 carrots.
• Take a pan, add 1tsp of ghee and fry the nuts. And keep a side. Add the grated carrot in the same pan, saute untill aroma comes.
• Then, Grind the boiled carrot by adding some water.
• In a heavy bottom pan add the grated carrot and pinch of salt. Cook for about 5mins. Now add the carrot puree too. Cook for few mins.
• Now add the milk to the carrot mixture, let them boil on a low flame.
• Add the sugar, and condensed milk. Stir continuously.
• Now add green cardamom crushed, nutmeg powder, cinnamon, edible camphor and fried nuts.
• Stir continuously for few mins. Switch off the stove. Healthy delicious dessert ready.
Note
Add sugar as per your taste.
