Cream of Broccoli Soup – (Healthy Version)| Broccoli soup
Cream of Broccoli Soup is a healthy version of soup we are gonna make. Broccoli is the good source of antioxidants and nutrients. It’s a very simple and easy to prepare.
In original recipe there will be lots of milk and all purpose flour to thicken the soup.
But Here we are going to make something very healthy and even helps you in your weight loss diet. Lets see.
Ingredients
• Broccoli – 200gms
• Oats – 3 tbsp.
• Onion chopped – 1 no
• Garlic Chopped – 1 tbsp.
• Pepper powder – 1 tsp
• Low fat cream – 2 tbsp.
• Water – 2 cups or more as per your consitency
• Olive oil – 1 tsp
• Salt to taste
Recipe
• Clean the broccoli use the stem also. Chop the broccoli into small florets and stem into small cubes.
• Heat oil in a pan, add the chopped garlic and onion. Saute it for a min.
• Add the broccoli and Saute it for 2 mins. Add water and some salt to taste.
• Let them cook till it turn soft.
• Then add the oats cook for 5 more mins.
• Let them cool.
• Then grind all together using blender. It should be creamy in texture.
• Transfer them to sauce pan. Add some more water as per you consistency.
• Allow the soup to boil for 5 to 8mins. Add the pepper powder and fresh cream. You can also check the taste. And add some more salt.
• Now the hot and healthy weightloss soup is ready.
• Serve it hot.
